Recipe: 2 Cups Peaches Sliced 1/2 Stick Butter 1/2 Cup White Sugar 1/2 Brown Sugar 1 Tbsps. Vanilla 2 Tbsp. preferred Rum
On medium high heat melt butter and add all ingredients except rum and cook until sugars dissolves and mixture starts to come to a boil. Once boiling add in rum and cook down until mixture becomes thick. Remove from heat and let cool.
Layout eggroll wrapper and scoop mixture letting majority of liquid drain off the peaches before placing onto wrapper. Place mixture unto wrapper and using water wet all around the edges of the wrapper and roll the wrapper together and completely sealing any holes.
Deep fry eggroll in hot oil heated to 350°. Eggrolls do not take long to cook. Cook until golden brown. Remove eggrolls from grease and toss in cinnamon sugar and coat with glaze.
