雲吞雞(4人份量):

材料:

冰鮮雞1隻

CP雲吞

金華火腿

冬菇

小棠菜

豆漿

處理:

  1. 清水浸軟冬菇。

  2. 雞:

a. 斬出雙腳,及切去腳甲。

b. 切去頸棄掉。

c. 起出雞翼及雞脾。

d. 搣去雞皮及雞膏。

e. 斬去尾部。

f. 清理雞內臟。

g. 粗鹽乸去雪味、腥味及加入鹹味。

  1. 用粗鹽浸洗小棠菜。

  2. 金華火腿切片。

  3. 冬菇已浸軟,洗淨。

  4. 雞已醃15分鐘,清洗鹽分及雞膏,擎乾水。

烹調:

  1. 煲滾2升水。

  2. 加入火腿及冬菇。

  3. 加入雞胸及雞背。

  4. 小棠菜已浸好,清洗乾淨。

  5. 雞湯已滾起,收至中慢火,煲15分鐘。

  6. 加入2隻雞脾及雞腳,滾起後再滾10分鐘。

  7. 放2隻雞翼,用中慢火再煲20分鐘。

  8. 夾出雞胸、雞背拆肉。

  9. 夾出冬菇、雞脾、雞腳及金華火腿。

  10. 放小棠菜入雞湯煮熟。

  11. 另一邊滾1煲水煮熟雲吞。

  12. 菜已煮好,夾上碟。

  13. 加入500毫升豆漿入雞湯至滾起。

  14. 加入雲吞,完成。

Ingredients:

Frozen Chicken 1 No.

CP wontons

Jinhua ham

Mushrooms

Green brassica

Soybean milk

Preparation:

  1. Soak mushrooms in tap water.

  2. Chicken:

a. Cut out 2 feet and nails.

b. Cut away neck

c. Cut out wings and legs.

d. Remove skin and far.

e. Cut away its tail.

f. Remove intestines of chicken.

g. Season with cooking salt to remove the unpleasant smells and tastes and add some salty taste to chicken.

  1. Soak green brassica with cooking salt.

  2. Slice jinhua ham.

  3. Mushrooms has been softened. Rinse thoroughly.

  4. Chicken has been seasoned for 15 minutes. Rinse chicken thoroughly Remove fat and hang dry.

Steps:

  1. Boil up 2L water.

  2. Add Jinhua ham and mushrooms.

  3. Add chicken breast and back.

  4. Green brassica has been soaked well. Rinse thoroughly.

  5. Chicken broth has been boiled up, turn to medium~low flame and boil for 15 minutes.

  6. Put 2 chicken legs and chicken feet into broth. Boil 10 minutes more after the broth has been boiled up.

  7. Put chicken wings, boil at medium~low flame for 20 minutes.

  8. Take out chicken breast and chicken's back. Remove bones from them.

  9. Take out mushrooms, chicken legs, feet and Jinhua ham.

  10. Cook well green brassica into chicken broth.

  11. Cook well wontons at the other side.

  12. Grwen brassica has been cooked well. Put on a plate.

  13. Boil up 500ml sugar~free soy milk with chicken broth.

  14. Put wontons into chicken broth. Serve.
