Video: Best vegetable of the world? Hop shoots, Belgium's gold, by Maarten Bouckaert from restaurant Castor

​Restaurant Castor in Beveren-Leie Belgium is a fine dining restaurant with a special focus on local ingredients. For his contemporary pure cuisine, he already received the award from Gault&Millau as Young Top Chef of the Year 2017 and a score of 16.5/20. Michelin rewarded Castor with two stars**. For WBPstars he prepared a dish with the very exclusive hop shoots. These shoots are only available during 4-5 weeks in February-March and the cost per kg varies between 120€ and 150€. In this movie we also have a look at the farm (www.forrestfarm.be) while the hop shoots are being collected. Off course everybody knows this hop as the base for the famous Belgian beers!
