Ingredients

For the Noodles

2 cups all propose flour, plus more for later

1/2 tsp salt

1 Tbsp oil

3/4 cup and 2 Tbsp hot boiling water

For the Broth

8 cups cold water

1/3 cup sliced & dried shiitake mushrooms or 3 dried shiitake mushrooms http://amzn.to/2rv02al

For the Vegetables

1/4 onion, sliced

1 small Yukon potato (approximately 4 oz), peeled and sliced into half moon

1 small carrot, julienne (approximately 4 oz)

1/2 small zucchini, julienne (approximately 4 oz)

2 green onions, cut in half lengthwise then cut into 2-inch long pieces

For the Seasoning
