材料: 節瓜(細)4個 免治豬肉12兩(454克) 薑大量 蔥大量
處理:
- 豬肉調味: a. 胡椒粉少許 b. 生粉1湯匙 c. 鮑魚汁1湯匙 d. 生抽1湯匙 e. 糖1茶匙 撈勻。加入油1湯匙,撈勻,醃10分鐘。
- 節瓜,去皮,清水洗淨。
- 蔥,切兩端,切段。 薑,去皮,切薄片。
- 節瓜,打直1開2,切細舊。
烹調:
- 大火在鑊中燒熱油1湯匙。
- 加入豬肉煎香。
- 加入薑片及蔥段。
- 可酌量加入少量油,繼續煎香豬肉。
- 加入節瓜炒勻。
- 加入清水蓋過瓜面,加入鮑魚汁1湯匙,炒勻,冚蓋,炆10分鐘。
- 節瓜已炆腍,完成,上碟,可享用。
Braised minced pork meat with fuzzy melon
Ingredients: Fuzzy melon (small) 4 Nos. Minced pork meat 12 taels (454g) Ginger a lot Green onion a lot
Preparation:
- Season the pork: a. Pepper little b. Tapioca starch 1 tbsp c. Abalone sauce 1 tbsp d. Light soya sauce 1 tbsp e. Sugar 1 tsp Mix well. Add oil 1 tbsp, mix well. Season for 10 minutes.
- Fuzzy melon, get it peeled. Rinse with tap water.
- Green onion, cut both ends. Cut in lengths. Ginger, get it peeled. Thinly slice.
- Fuzzy melon, divide into 2 shares vertically. Cut into small pieces.
Steps:
- Heat up oil 1 tbsp at high flame in wok.
- Fry the pork well.
- Put ginger and green onion.
- Add little oil, continue frying the pork well.
- Put fuzzy melon, fry well.
- Put water just covering up the fuzzy melon, add abalone sauce 1 tbsp, fry well. Cover up the wok. Braise for 10 minutes.
- Fuzzy melons have been braised well. Complete. Put on plate. Serve.
