SHAHI MURGH MUSALLAM
Ingredients:
For Water Bath: ~ Water (as required) ~ 1 tbsp Ginger Garlic Paste ~ 1 tsp Salt ~ 1 tbsp Lemon Juice ~ Whole Chicken (approx. 1 kg) For Spiced Yogurt ~ 1 cup Yogurt ~ 1 tbsp Ginger Garlic Paste ~ 1 tbsp Red Chilli Powder ~ 1 tbsp Coriander Powder ~ 1 tbsp Green Chilli Paste ~ 1 tsp Salt ~ 1 tsp Kashmiri Red Chilli Powder ~ 1 tsp Whole Spices Powder ~ 1/2 tbsp Cumin Seeds (roasted & crushed) ~ 2 Boiled Eggs - https://youtube.com/shorts/zuoRkCY0YTE?feature=share ~ 500 ml Oil
For Gravy ~ Half of the strained oil from the Oil in which we fried the Chicken ~ 2 medium sized onions (sliced) ~ 1 tbsp Ginger Garlic Paste ~ 1/2 tsp Turmeric ~ Salt to taste ~ 1 tsp Kashmiri Red Chilli Powder ~ 2 tsp Whole Spices Powder ~ 1 tsp Cumin Seeds (roasted & crushed) ~ 2 tbsp Cream ~ 1 cup Yogurt ~ 4-5 Tomatoes (chopped) ~ 6-7 Green Chillies ~ 1-2 tbsp Fresh Coriander
SAFFRON (ZAFRANI) RICE
Ingredients: ~ 2 cups Rice ~ Water as required ~ 2-3 tbsp Salt ~ 1 tbsp Cumin Seeds ~ 1-2 tbsp Butter ~ Few Strands of Saffron ~ Some Red & Yellow Food Colour (optional)
Method:
~ Parboil Rice with Salt & Cumin Seeds. ~ After straining the rice, add in a pan, add saffron, butter and food colour and give 'dum' for 10-15 minutes.
