In this video, I again use the 22.5 Weber Smokey Mountain Smoker in a kettle style using the VORTEX kettle assessory to BBQ Wings. It did just fine and past the test with flying colors. With the setup I had, being the vortex setup on an added grate 5 inches below the meat grate. On it sat the vortex filled with red hot Kingsford blue charcoal which rocked through the entire cook of 1 hr 45 min with plenty of charcoal left over which was snuffed out to use next time out. The temp held at 450 degrees. I added several peach wood chunks for smoke flavor up front and none thereafter. I used Bang Bang sauce on half of the wings, and another mix of Sweet Baby Ray with added brown sugar, honey, and some red pepper jelly to the other half of ribs.
