Vegetable oil for deep frying 300g Prawns, peeled and deveined ½ tsp sea salt 1 tbsp toasted Sesame seeds 1 spring onion, finely sliced
The Batter 10 tbsp cornflour (cornstarch) 5 tbsp plain flour 1/2 tsp baking powder 1/2 tsp salt 150 - 160ml cold soda water The Sauce
6 tbsp honey 2 tbsp light soy sauce ½ tbsp dark soy sauce 1 tbsp Shaoxing rice wine 1 tsp rice vinegar 50ml chicken stock
