Recipe -

For the cookie cups

115g butter, soft

170g soft brown sugar

50g golden syrup

1 lg egg

250g plain flour

1/2 tsp bicarbonate of soda

1/2 tsp salt

1/8 tsp EACH of ginger, nutmeg, cinnamon & cloves (all ground)

100g fine dark choc chips

For the cheesecake filling -

210g cream cheese

45g caster sugar

1 egg

1 ball of stem ginger

For the Ginger Buttercream

150g butter, soft

240g icing sugar

3-4 tbsp ginger syrup

Melted chocolate and sprinkles and crystallised ginger to decorate
